Mum's Dinner Jaffle

Mum's dinner Jaffle is one that for me evokes memories of childhood dinners. One of the favourites was fried egg, homemade chips and baked beans.

I've gone as authentic as possible with a fried egg and baked beans. For the chips, I have instead made a potato rosti to layer in with the jaffle.

All of this is pulled together with a beautiful and delicious red leicester cheese. I always remember big blocks of orange cheese growing up, instead of the mostly creamy, yellowy cheddars available today.

To make Mums Dinner Jaffle you will need the following ingredients

2 slices of white sandwich bread

Butter

A few slices of red leicester cheese

Baked beans

1 egg

1 white potato

Flour

One white potato, grated with some flour, salt and pepper. Strain most of the moisture from the popato using either muslin cloth, or some kitchen paper. Be sure not to leave the potato too dry, or it will not hold together when fried.

Fry the potato off in a thin sheet about 0.5cm thick. Any thicker, and it'll be a tight fit to layer everything in the jaffle.

In the absence of square molds, I have just made a couple of square molds from aluminium foil. You want these to be just a little smaller than the slice of bread that you are using.

Don't fully cook the egg in the pan. Cook it just to the point the the base of the egg is firm enough to survive the transfer from the pan on to the jaffle.

The Jaffle maker will finish cooking any remaining egg white, and undercooking the egg will help keep the yolk nice and gooey when the jaffle is cooked.

Butter one side of all of your bread to leave a delicious golden finish on the jaffle. Layer everything together, with the beans on the bottom, then the potato, egg, and a layer of the red leicester cheese on top. Top off with another slice of buttered bread and cook.

There may be a little oozing that occurs during cooking. If you get lucky, though, you will be rewarded with a beautiful, rich, golden, gooey egg yolk. If the yolk bursts on your first attempt, it's a good excuse to make another.

...and here is the final result. A sumptuous, carbtastic, moreish, baked bean, egg, potato and red leicester jafffle. I hope you enjoy it as much as I do.
