Being Truffle season we couldn't go past this fancy ingredient. Robin and i love truffles, Truffle Oil, Truffle Chips, Truffle cheese, Truffle Butter, Truffle Salt... the list goes on.

Truffle seems to be everywhere these days...so why not create The Truffle Jaffle.

The cheese we used for this jaffle was the Ford Farm Truffler English Cheddar which we found at our local Grocer located in Leichhardt Market Place (I love this place) , The cheese here is always consistently changing ( there is a green pesto gouda i had my eye on... but thats for another day and another blog)

As much as this cheese would have been fine on its own we decided to pair it. Google is always a great tool for inspiration or to tell you what to do when you may or may not be a little hungover.

I googled truffle pairings and i got steak... so naturally i went with Smoked Beef.

we chose the black forest rare roast beef, finely sliced to pair with the truffle cheese. it was the perfect pairing for this cheese.

we got our meat from the Woolworths deli counter in Leichhardt (you can try before you buy here too, always recommended)

we piled on the truffle cheese because why not over 2 slices of the black forest beef. we also filled out the jaffle with a slice of plain cheddar cheese.

as any jafflemaker knows you must lather the outside of the sandwich with butter before placing in the breville. if you really love truffle you could use pepe sayas truffle butter.

Cook until Golden or until the cheese starts to escape.

Cut in Half

and enjoy with a bottle of wine,

I have chosen the Podere Montepulciano D'Abruzzo 2015 from italy, great with beef, full bodied with Plum and cherry flavours.

This Ruby red wine is also amazing value from Dan Murphys between $10 and $15 and a great pairing with this tasty jaffle, a great alternative for your friday night cheese board.
