The Mexican Jaffle

Both robin and i don't mind a bit of spice, we love mexican food and the spicier the better so we decided to make a chilli con carne and used the left overs for our mexican jaffle.
to make the chilli con carne you will need the following ingredients
500 grams of Premium Beef Mince
1 whole chopped onion (Brown or Red)
1 teaspoon of Paprika
4 teaspoons of Chilli Powder (6 if you want it really spicy)
2 teaspoons cumin
garlic
1 can of tomatoes
2 fresh tomatoes
1 can of cooked Kidney Beans ( i like my Kidney Beans well cooked to the point that they start to fall apart)
there is one more ingredient but it is not for the faint of heart !!
Earlier in the week Robin had purchased a chilli paste from the chilli factory - Reaper Paste made from Carolina reaper chillies (500 times hotter than tobasco)

for the sides
Guacamole
1 avocado
lime Juice
Salt and Pepper to taste
Sweet potato Mash
Sour cream (or Greek Yogurt)
to make the Jaffle
2 peices of white bread
Butter
Cheese ( preferably mozzerella)
Chilli Con Carne ( Preferrably the next day as it lets the spices infuse a little more)

Butter the bread and place on the jaffle maker
Place the cheese in the bread
fill the jaffle with chilli con carne ( if cold heat up first and try noy to overfill the jaffle )
cook the Jaffle until golden brown

serve with sides
